In this challenging role I managed a team of ten. Management responsibility involved increasing profit whilst maintaining Roux standards. Purchasing and dealing with suppliers to ensure quality and costs were maintained as well as budget setting. General management duties such as health and safety compliance, staff training, development and scheduling were all part of the role.

This highly peripatetic organnisational role involved a great deal of flexibility and planning as the employer would travel between the three cities. Whilst working there I catered for the European Royalties . This role was pivotal in establishing me as a personal chef for some of the most high profile families in London and abroad.
